Low-temperature vacuum cooking

The method makes all the difference: we cook the sauce under vacuum at a low temperature. This slow process allows the tomatoes, extra-virgin olive oil, garlic, and chili pepper to truly blend together, bringing the flavors into a rich balance.

Without the harsh heat of traditional pasteurization, the oil retains its character and fragrance, the tomatoes don’t darken, and the chili pepper adds warmth without overpowering the other flavors. The result is a thick, well-rounded sauce with a noticeable but gentle heat.
