Artisan Extra Jam with Dottato White Figs - No Preservatives
White Dottato figs, picked in the cool hours
Our figs are picked between late July and August, in the early morning hours, when the fruit is at its ripest and its aroma is still vibrant. They are White Dottato figs, a traditional variety with sweet, fragrant flesh.
Just four ingredients
To make this fruit spread, we use only figs, cane sugar, lemon juice and a vanilla infusion to soften the acidity of the lemon juice. The vanilla is added only during cooking, as part of the natural preservation process. No pectin, thickeners or preservatives. Its thickness comes from cooking and the fig skins, not additives.
Low-temperature vacuum cooking
We cook the figs under vacuum at a low temperature to preserve their colour, aroma and texture. This quick process allows us to use less sugar, retain the fragrance of freshly picked figs and treat our fruit with the utmost care.
